Mutfak Sözlügü
| Hepimiz bir sekilde mutfakta çalisiyoruz, bir seyler üretiyoruz. Ama peki hepimiz tüm kavramlari biliyor muyuz? Hadi, hem kendinizi test edin hem de bilmediklerinizi ögrenin. Her seyin sözlügü olur da mutfagin sözlügü olmaz mi? Oluyor iste. Alaca soymak: Kabuklu meyve veya sebzelerde kabugun birer parmak arayla uzunlamasina soyulmasina denir. Aperatif: Yemekten önce istah açici olarak alinan içki yiyeceklerdir. |
Aroma: Meyvelerdeki hos kokuya denir. Tatli ve pastalarda güzel koku vermek amaciyla portakal, limon kabugu rendesi veya vanilya kullanilir.
Baglamak: Çorba ve yahni gibi sulu yiyecekleri koyulastirmaya denir. Günümüzde daha çok nisasta ve krema en iyi iki baglayici olarak kabul edilir.
Barsama: Güzel kokulu, yapraklari yemeklere konan nane ve yaban kekiginin ortak adi.
Benmari: Bir tencere yariya kadar sicak su ile doldurularak agir ates üzerine oturtulur. Bu tencerenin içine daha küçük bir kap tabani ve kenarlari sicak su ile temas edecek sekilde yerlestirilir. Yiyecekler bu ikinci kabin içine konularak pisirilir.
Boca Etmek: Bir kerede hepsini dökmek
Buket Garni: Birbirine baglanmis defne yapragi, maydanoz, kekik.
Karanfil deste gider
karanfilli sogan: Kabuklari soyulmus sogana 2-3 dis karanfil saplanarak bazi yemeklerin haslamasi sirasinda kullanilir.
KEF: Kaynatilan yemegin üzerinde istenmeyen kisimlarin olusturdugu köpük.
Konkase domates: Kaynayan suya atilan domatesler kabuklari çatlamaya baslayinca çikarilir, soguk suya atilir böylece kolayca kabuklari soyulur. Domatesler ikiye kesilip çekirdekleri çikarilir ve zar büyüklügünde dogranir.
Közlemek: Izgara veya kömür atesinde sebzelerin kabuklariyla pisirilmesi.
Krim: Taze, dinlenmis sütün üzerinde biriken yagli kisim.
Kuzu gömlegi: Kuzunun karin kismindaki iç organlarini gögüs kafesindeki organlardan ayiran zar kismi.
Labne: Hiç tuzu olmayan yumusak krem peynir. Daha çok tatlilarda ve pastacilikta kullanilir.
LAPA: Taneli gidalarin genellikle pirinç suyuyla kaynatilarak bulamaç haline getirilmis sekli.
Marinat: Et yemeklerine lezzet katmak veya yumusamalarini saglamak için taze ot ve baharatlardan hazirlanan sivilar.
Meyane (Beyaz): Esit miktarlarda un ve yag kullanilarak hazirlanir. Yag eridikten sonra unu ilave edip tahta bir kasikla karistirarak agir ateste pisirilir.
Meyane (Kahverengi): Bu meyane de ayni biçimde yapilir. Ancak daha uzun süre pisirilerek meyanenin açik kahverengi bir renk almasi saglanir.
NEKTARIN: Seftali agacina erik asilanarak elde edilen seftali tadinda tüysüz meyve.
ÖZEMEK: Birkaç seyi birbirine karistirip iyice çirparak yogunlasmasini saglamak.

Çentmek: Sebze yada meyveleri biçakla dikine her yönde kesikler yaparak minik minik dogramak.
Çesni: Yemeklerde farkli tatlar elde etmek için kullanilan çesitli baharatlara denir.
Demlemek: Pisen yiyecekleri atesten indirerek kapaklarini kapali tutup kendi buharlarinda dinlemeye birakilmasi.
Fiske: Bas parmagiyla isaret parmagi arasinda kalan miktardir.
Fondan: Sekerleme haline gelmis beyaz krema.
Füme: Kurutarak saklama yöntemlerinden biri. Et, balik gibi gidalarin ates dumaninda kurutulmasi.
Gato: Pastalarin pandispanyasina verilen addir.
Göz göz olmak: Muhallebi, pilav gibi yemeklerin suyunu çektikten sonra üzerinde olusan küçük oyuklara denir.
Gratine Etmek: Genellikle gratine edilecek yemegin üzerindeki sosa rendelenmis peynir serpilerek firin izgarasinda kizartilmasi islemidir.
Harç: Kullanilan malzemelerin dogranarak karistirilmasi.
Islatmak: Zor pisen kuru baklagillerin pisirme sürelerini kisaltmak için önceden su içinde bekletilmesi.
Jelatin: Toz yada tabaka halinde satilan bir kivam verici.
Terbiyeli mi? Terbiyesiz mi?
Pastörize Besinlerin özel cihazlarda 65 derece kadar isitilarak birdenbire sogutulmasiyla, içindeki mikroplarin öldürülmesi islemi.
Pembelestirmek: Yagda kavurarak rengin dönmesini saglamak.
Pilaki: Bol sarimsak, sogan, domates ve zeytinyagi ile pisirilen yemek türü.
Pose Etmek: Yiyecegin kaynama noktasinin altindaki sicaklikta pisirilmesidir. Kullanilacak sivi bir tasim kaynadiktan sonra alti kisilarak kaynamasi durdurulur.
Silkme: Çesitli sebzeler ve etle pisirilen bir tür sicak yemek.
Sogan (Piyaz): Kabuklari soyulan sogan ikiye kesilir. Kesilmis yüzü altta kalacak sekilde kesme tahtasina konur. Birbirine paralel çok ince dilimler halinde kesilir..
Sote Etmek: Esit parçalara ayrilmis sebze veya etin sürekli karistirilarak kahverengilesinceye kadar pisirilmeleri.
Tavuk Ütüleme: Tavugun tüylü kisimlarinin aleve tutularak tüylerinin yakilarak yok edilmesi.
Terbiye Etmek: Hazirlanan karisimda bir süre bekletilerek yumusaklik ve lezzet kazandirmak; veya yemeklerin suyuna un, yumurta, limon gibi malzemeleri ekleyerek koyulasmasini saglamak.
Tuzlama: Yiyeceklerin bir süre bozulmadan saklanmasina yarayan yöntem ve bu yolla hazirlanan yiyecek.
Yedirmek: Bir sivinin kendisinden daha yogun kivamda olan bir maddeye eklenerek karisiminin saglanmasi.
